Caviar has been savoured as one of the most sought-after delicacies made exclusively from the roe of several types of fish. Black caviar is made from unfertilised fish eggs of sturgeons, which can range in colour from jet black to mild silver-grey and is collected from various sturgeon species. Black caviar is one of the most costly and exquisite foods in the world, and its manufacture is a labour-intensive process – and it is considered one of the most luxurious foods.
What are the Types of Black Caviar?
Although there are 27 living species in the sturgeon family, the roe required to make black caviar is harvested from only 7, and only 5 types of black caviar in Dubai are famous globally –
- Beluga – The colour of the roe varies from almost jet black to pearl grey, with older individuals usually producing lighter-coloured eggs.
- Osetra – Older sturgeons produce lighter-coloured roe, with eggs usually light grey, black, or golden brown. Osetra roe has a rich, creamy, nutty flavour that melts softly on the tongue.
- Kaluga – Kaluga caviar has a buttery taste with a mild salty taste. They are large, and the colour may vary from khaki green to dark yellowish.
- Sevruga – Sevruga caviar are tiny, exquisite dark grey eggs that taste distinctly of butter.
- American – American caviar varies in size and colour – they might range from black to grey to khaki green.
How is Black Caviar Dubai Extracted?
“Stripping” is a widely used extraction technique. After keeping an eye on the fish to ascertain the best moment to harvest, farmers will cut a small opening along the urogenital region to remove the eggs. Black caviar of superior quality may also be obtained by massaging the roe away.
Stripping doesn’t harm the fish; they produce a considerably more sustainable source of roe, enabling fish farms to produce black caviar consistently over time. Also, the process of extraction and production makes the product more costly.
Black Caviar in Dubai is usually served in a mother of pearl spoon, which helps keep the taste of the caviar intact and rich. It can be served as an appetiser, with wine, and even with creme fraiche.
