The Golden Oseitra, also known as Acipenser Gueldenstaedtii , is a species of sturgeon that originates from Russia. This majestic fish can be found in the wild in two main locations – the Caspian Sea and the Danube River. The Golden Oseitra takes quite some time to mature, reaching full maturity between the ages of 10 – 11 years old. However, once mature, this species can live up to 50 years, making it a true marvel of nature. In terms of its physical characteristics, the Golden Oseitra can weight anywhere from 20 to 80 kilograms, with a distinctive golden hueto itsskin.
The Golden Oseitra has a specific harvesting period, which typically lasts from late fall to early winter, usually between October and December. During this period, the female Golden Oseitra is carefully caught and harvested. The harvest period is relatively short, lasting only a few weeks, as the eggs are most flavourful during thistime. After the harvest, thefish arereturned to their natural habitat to continuetheir lifecycle.
